Mezcal IBA

In on of Mexico’s most rugged and isolated regions is the state of Oaxaca (wa-HAH-ka) where IBA is crafted. In the local Zapotec dialect, IBA, meaning Heaven, is where a legend of Mezcal begins. One legend believes the Gods of Heaven released a bold of lightning upon an agave plant, cooking the pina (root), releasing the liquid inside and thus giving the people an elixer from the Gods.

IBA, a strictly handcrafted Mezcal, begins with handpicked agave plants cooked in deep holes in the earth over carefully selected wood and river stones. The pine is smashed with mallets as well as the traditional horse and boulder method and then, through a proprietary fermentation process, distilled to achieve perfect clarity with expectional flavor.
